Arnaud Donckele's three-star room at Cheval Blanc Paris by the Seine, where the sauce leads each course and the menu is built around it. Book it when: A defining Paris dinner inside the newest of the palace hotels, with the Louvre and the river at the door. Book elsewhere when: An informal evening or a first-timer's bistro night. This is the most ceremonial table in the register.

The three-star dining room of Le Bristol on Faubourg Saint-Honore, grand hotel classicism with a garden at the window. Book it when: The classical palace dinner: haute cuisine canon, formal service and a room that has hosted this kind of evening for decades. Book elsewhere when: Diners chasing novelty or a tasting-only format. The strength here is the canon, done at full depth.

Alain Passard's three-star house on Rue de Varenne, where the kitchen garden writes the menu and vegetables take the lead.
