Heinz Reitbauer's three-star pavilion in the Stadtpark, Austrian produce worked with a precision that made the house the country's reference table. Book it when: The definitive Austrian fine-dining evening, in a glass pavilion with the park around it and a famous bread and cheese service. Book elsewhere when: Diners after French classicism or a discreet cellar room. This is a bright, modern space with its own rituals.
Juan Amador's three-star table set inside a brick wine cellar in Doebling, at the edge of the city's vineyards. Book it when: A destination dinner outside the centre, under vaulted brick, where the wine setting is half the evening. Book elsewhere when: A walkable dinner from a Ring hotel. Doebling asks for a car and the room seats few.
The two-star dining room of the Palais Coburg, a palace hotel table known as much for its wine cellar as for the kitchen. Book it when: Diners who choose the bottle first: the cellar is the draw and the tasting is built to meet it. Book elsewhere when: Anyone indifferent to wine. Without the cellar, the evening loses its main argument.
