Go when: A full day that turns into a night, with a table or bed reserved ahead and a boat-drop arrival if the day includes one. Go elsewhere when: A quiet swim-and-lunch day or a family afternoon. The volume rises with the sun and the bay fills early.

A restaurant-led club set into the cliffs above Sol d'en Serra, where the cove does the work the music does elsewhere. Go when: A long lunch with a swim attached, a morning yoga session or a dinner that ends with the sea below in the dark. Go elsewhere when: A party day or celebrity-watching. The room is quiet on purpose and the cove is small.

The barefoot classic on Es Cavallet, a white-wood beach house on a long protected beach with Formentera across the water. Go when: The effortless version of the beach day: sand underfoot at the table, long lunches and a walkable natural beach on both sides. Go elsewhere when: Nightlife or production. The point here is that nothing is staged, and the beach closes the day early.

Cala Bassa Beach Club

The west-coast bay club on Cala Bassa near Sant Antoni, a broad family-friendly cove with several kitchens instead of one dining room. Go when: A mixed group or a day with children, on a shallow clear-water bay, with sunset on the right side of the island afterwards. Go elsewhere when: Seclusion or a formal table. The bay is popular and the club is built for volume, not hush.
